Banana Nut Bread with Chocolate Chips

Yields1 Serving

 2 cups flour
 1 tsp salt
 2 tsp baking soda
 1 cup butter - very soft
 2 cups sugar
 2 cups mashed ripe banana (measure in Pyrex liquid measuring cup)
 4 eggs, slightly beaten
 1 cup chopped walnuts
 1 cup semi sweet chocolate chips

Grease and flour two 9 x 5 inch loaf pans. Stir together flour, salt and baking soda. Preheat oven to 350 degrees.

In a separate large bowl, mix softened/melted butter and sugar and mix well. Then add the mashed banana and eggs

Add dry ingredients and stir until batter is thoroughly blended. Then add the chopped walnuts and chocolate chips.

Pour batter into two well greased and floured (9×5 inch) loaf pans and bake at 350 degrees until toothpick inserted in center comes out clean. Start checking for done-ness after 45 minutes of baking. (The bread sometimes looks very dark colored, but it’s not done until the toothpick comes out dry.)

As soon as the bread comes out of the oven, run a stick of butter over the top of the bread a few times so it's coated lightly.

Let the bread cool a few minutes then remove it from the pan and wrap it in plastic wrap or seal it in aluminum foil to keep the moisture in. Enjoy the bread warm for a wonderful melty chocolate experience!
