1 ¼ cups butter (softened
¾ cup firmly packed brown sugar (light or dark brown)
½ cup granulated sugar
2 eggs
1 tsp vanilla
1 ½ cups unbleached flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
1 apple (Granny Smith or any kind) shredded
3 cups Old Fashioned Quaker Oats
1 cup raisins (soaked in warm water to soften- then drain thoroughly))
1 cup Optional - butterscotch chips - only for Oatmeal Scotchies
Butterscotch Ganache
1 cup Butterscotch chips
½ cup Whipping cream

Heat the oven to 350. Beat the butter and sugars on Medium speed of an electric mixer until creamy. Add eggs and vanilla, beat well.

Combine flour, baking soda, cinnamon and salt and mix well and add it to the butter, sugar, egg, vanilla mixture.

Add oats and drained raisins, and shredded apple, mix well.

For Oatmeal Scotchies, omit raisins and add 1 cup of butterscotch chips. Mix well. Bake at 350 for 10 to 12 minutes or until nicely golden brown.
Butterscotch Ganache

Place the butterscotch chips and whipping cream in a small pan over low heat and stir until the chips have melted and the mixture is smooth. Let it cool a bit, then drizzle it over the cookies. Sprinkle with a little sea salt.
