Easy, Quick Italian Turkey Meatloaf

The great thing about freezing cold weather is it forces you to stay inside and find something to do so you don’t go insane.

Usually, I go to my freezer, find something I bought thinking I would make something with it, yet never did, and finally make something with it. One pound of ground turkey is currently staring at me from the freezer and its time is coming.

This recipe was a favorite of my daughter and her friends back in their high school and college days. It’s really easy and quick. If you want to fancy it up you can add a bit of fresh rosemary, thyme and basil, but it’s really good (and easy) as is.

Easy, Quick, Italian Turkey Meatloaf

 1 lb ground turkey
 1 garlic clove, finely minced
 2 eggs
 3 tbsp extra virgin olive oil
 ½ cup parmesan cheese
 ¾ cup Italian style bread crumbs
 ¾ cup oats
 2 tsp dried Italian seasoning
 salt and pepper to taste
 ½ cup grated mozzarella to sprinkle on top
Quick Tomato Sauce Topping
 1 tbsp extra virgin olive oil
 2 cloves finely minced garlic
 2 14.5 oz cans of stewed tomatoes (I use S&W)
 ¼ cup merlot or cabernet wine (optional)
 ½ tsp Italian seasoning

Thoroughly mix together all meatloaf ingredients, turkey, garlic, eggs, oil, parmesan, bread crumbs, oats, Italian seasoning, salt and pepper. Form it into an oval-shaped loaf about two inches in height and place it in a greased medium baking pan. Cover it lightly with foil (it doesn't need to be wrapped) and bake at 350 degrees for 30 minutes.

While the meatloaf is cooking, in a medium saucepan, cook the chopped garlic in olive oil about a minute. puree the stewed tomatoes in a food processor, or to minimize dishes, use a stick blender and puree them in the olive oil and garlic mixture. Then add Italian seasoning and wine. Cook uncovered over low heat for 15 minutes, stirring occasionally.

Pour the sauce over the meatloaf after the meatloaf has cooked for 30 minutes.  Let it cook with the sauce for an additional ten minutes with the foil lightly on top. Top the meatloaf with grated mozzarella and bake uncovered for an additional five minutes or until the cheese has melted. Serve immediately.

      Hi Marianne, I am so excited you are following me! I bought the unsalted one, but I also bought the unsalted piccante one too. I haven’t tried the piccante one yet though. I am thrilled. Please tell Mrs. K and let’s have lunch one of these days, I would love that!

    Ha! Always love waking up to a little Fran in the morning! I have a similar turkey meatloaf recipe and a little dream in my head of how I would want to serve it, so maybe that’s the meal I’m gonna inviter you over for – get some Tunno feedback… Martin and I are sitting here thinking of other bra-sprinkling combinations for you. But truly, you don’t need anything but you, Fran. You are just perfect!
