
Thoroughly mix together all meatloaf ingredients, turkey, garlic, eggs, oil, parmesan, bread crumbs, oats, Italian seasoning, salt and pepper. Form it into an oval-shaped loaf about two inches in height and place it in a greased medium baking pan. Cover it lightly with foil (it doesn't need to be wrapped) and bake at 350 degrees for 30 minutes.
While the meatloaf is cooking, in a medium saucepan, cook the chopped garlic in olive oil about a minute. puree the stewed tomatoes in a food processor, or to minimize dishes, use a stick blender and puree them in the olive oil and garlic mixture. Then add Italian seasoning and wine. Cook uncovered over low heat for 15 minutes, stirring occasionally.
Pour the sauce over the meatloaf after the meatloaf has cooked for 30 minutes. Let it cook with the sauce for an additional ten minutes with the foil lightly on top. Top the meatloaf with grated mozzarella and bake uncovered for an additional five minutes or until the cheese has melted. Serve immediately.
