Buck the Bleep Up

Last week I was at work getting coffee,  talking about wanting to lose weight with a co-worker. I was saying how frustrating it was that I haven’t been successful. She’s one of my favorite co-workers. She leaned over to me smiling and said, “Sometimes Miss Fran, you just have to buck the f__k up,” which made me laugh so hard I almost spit.  She would know, she’s been a single mom for years.

But it’s so true. My half-hearted attempts at losing weight fail because I’m not pushing myself hard enough, and I know it. Simply put, I eat too damned much and haven’t been exercising enough.

It’s so easy to blame everything and everyone else, but if I really wanted to lose it, the weight would be off.  My life is everything I’ve created it to be up to this point. If I don’t like it, only I can change it.  That’s both liberating and depressing, if you really stop to think about it.

Stupid discipline — it was my father’s forte, but apparently isn’t mine. I have it in spurts. I even went running last night just to prove I could do it.  So, I’m attempting to hone more discipline so I can drop this 10 pounds I’ve gained since I started working at a job where all I do is sit and write.

IMG_7725.JPGIn keeping with my new ninja-like determination, I’m trying to create healthy lunches like the one I had today.  It was made of farro, zucchini, green onions, and sundried tomatoes, sprinkled with a little Parmesan cheese.

Farro is an ancient grain that apparently has great health benefits and has been hip for a while after falling out of favor for a few hundred years. In 1/4 cup of uncooked farro there are 7 grams of protein, 160 calories, no cholesterol, 3 grams of dietary fiber, no fat and no sugars! It’s really good and kind of chewy, and filling.

Trust me when I tell you, I will never become one of those obnoxious people who forces her health crap on you because she’s seen the light. I’ve had people do that to me with food, religion, alcohol, you name it and it drives me nuts. My blog will always contain healthy stuff and trashy stuff because life is no fun if you don’t let loose every once in a while.  Be good and take care of your health, but when you do decide to have something trashy,  REALLY ENJOY IT!!! Then go back to being good again. I live by the good 90% of the time, bad 10 percent of the time motto. It keeps me mostly sane, even if I am usually 10 lbs. overweight.

And when you can make something like this Farro Zucchini dish, that tastes good and is good for you, well that’s proof there is a God, and she likes to eat too!

1 cup farro

2 cups water

1 Tbsp. olive oil

1 bunch of green onions chopped in 1 inch pieces

2 small zucchini, cut lengthwise in half, then chopped into 1/2 inch pieces

8 sundried tomatoes, choppped into small strips (I get big jars of sundried tomatoes at Costco and they are great!)

Parmesan or Romano Cheese

Farro cooks much like rice. Just put the farro in a pan with twice as much liquid and add a pinch of salt. Let it come to a boil, then let it simmer until it’s tender (about 20 minutes).  When it’s done, set it aside

In a medium skillet, saute the onion, and zucchini in the olive oil about 5 to 7 minutes, or until slightly golden on the sides.  Then add 1/2 of the farro (save the other half for the next night!) to the zucchini-onion mixture.  Toss to mix and add the sundried tomato pieces to the mixture. Mix thoroughly, and pour into a bowl. Sprinkle with Parmesan or Romano and serve.

You can also add chopped parsley, or chopped black olives, feta cheese, or whatever sounds good to you. I made it again with leeks and zucchini and it was fabulous! I’m sure whatever you choose it will be good!

    Love simple dishes like this. I do miss me some grains on occasion. I like the 90/10 rule, but it wreaks havoc with my attempts at losing a human. Sigh.

    Thanks for your encouragement on coping with my electric stove problem. Now, let us talk about you dancing-in-the-kitchen [instead of sweating in a gym] to burn calories. You may recall that we had a phone conversation some years ago about my music-dance project. I wanted your writing-skills to help with a music-learning project. [My focus has recently changed from the music to the dance.] Attending the Montrose Arthur-Murray Studio Grand Open on Honolulu St. in October of 2016, I met a dance instructor who, I hope, will be the target of a future story about the dance project. (She is now a Facebook Friend and dancing is her passion]. More may follow on this. [If you still live in #202 on Allen Ave., I could give more details by USPS, which may be a better option.]

    I wish you could help me with cooking-for-one; I recently moved into a new place and the microwave & dollar-store food is all I can handle. [The place has an electric stove – but I have never used one, so – – ] Oh, about your exercise-bucking problem, I may make you an offer. I will show you some ordinary dance-lessons-for-exercise-at-home if you will show me how to cook meals-for-one on an electric stove without burning something up – – or burning something down. Just a thought. More may follow on this.

      You are too funny Tony. I think we could probably work something out. My mom had an electric stove, and although I am not a big fan of electric, the good thing is you are less likely to catch a scarf on fire with one (and yes, I’ve done that!) Doh! The worst mistake to make on an electric stove is to lose your patience. I always hated waiting for it to heat, so I’d turn the heat up to high then burn things. Keep your patience and I think you’ll be OK.

    Your recipe sounds very yummy & healthy, going to try it. I agree sometime you just have to be bad & eat chocolate cake or drink a bottle of wine with a good friend with some sweet potato fries. Life is short & not always fair so have fun & laugh a lot!!! Love ya, Fran 😘

    As a vegetarian, farro is a godsend. I need to pick up some this weekend. I’ve been at a conference all week, and lets just say my eating habits have not been great.

      I totally understand. If I ate everything they have at work, I would weigh 300 lbs.! I do love the consistency of farro far better than rice and the flavor is better to me than quinoa, so I’m hooked. It’s versatile too, I’m going to try it for breakfast tomorrow morning!

    I have never heard of Farro. Is it good & filling? Is it fattening? Looks like an interesting recipe. Like I said, you could be me recovering from a knee cap fracture..
    and not be able to do much until it heals well enough. Until then, the only enjoyment you have is eating, unfortunately. But, it’ll be behind me before too long. Good “food for thought, article, Fran.

      You should try it. It’s what Angelina Belculfine use to put in those wheat pies. They were farro. It’s very good and has lots of fiber and is high in protein, plus isn’t very fattening at all. Give it a shot. I think you’ll like it!

    The older you get, the harder it is to lose weight. Up until a year ago, I could eat anything I wanted and never put on a pound. I must have crossed some threshold, because all of a sudden, I started gaining weight. So after Christmas, I started cutting back on everything. Now 16 months later, I have cut back significantly on my food intake, but have only been able to lose a few pounds. I go to bed hungry most nights since I cut out my after dinner snack and it seems I’m hungry most of my life. I feel like I’m in Bangladesh. But I still have a few more pounds to shed, so maybe I’ll try your recipe, if I can find farro. I hope I don’t get it mixed up with Terro, the ant killer. Hope you are well.

      Oh Chas, you always make me laugh. I think you can order it from Amazon, but I’ll bet any Italian store would have it. It’s been pretty popular for a while. It’s really good. I just made it with leeks and zucchini and it was really good. I also like it with spinach. You can chop up little bits of chicken or ham and make it a mostly veggie meal seasoned with meat. I’ll be curious to hear what you think.

    You’ve got the determination and the right idea; keep at it and you will succeed. I’ve been going through the same thing, but have an advantage on you because I’m retired. I’ve been doing the Jenny Craig program and working out at the gym, five days a week. So far, I’ve lost 55 lbs. and feel a lot more energy. I’ve still got around 15 lbs. to go, and I’m taking my time to do it. Good luck! You can do it!

      Wow Bob, that is impressive!!! I am trying. I find that skipping dinner helps, but usually, I settle for a small salad instead of what I used to eat! So happy for you. i’m sure you look fabulous!

      I love the way you think Monica, I am right there with you. We may as well enjoy whatever time we have here. I’d be bummed out if I’d passed up a good piece of See’s candy, then got plowed over by a truck!
